Faced with the challenges of raising a daughter with cerebral palsy, Cassy turned her love for cooking into an opportunity later in life. Deep-Fried Alligator Egg: A finalist in the Big Tex Choice Awards, this dish features seasoned alligator meat, Monterey Jack cheese, jalapeños, and onions, deep-fried to perfection and served on a nest of crispy shoestring potatoes.
